The number that decides everything: fat percentage
- Under 25% fat — cannot whip properly. Marketed as 'light cream' or 'cooking cream'. Fine for sauces, useless for piping.
- 25–30% fat — will whip but barely. Foam is fragile, deflates fast, weeps within hours.
- 30–35% fat — the international minimum for 'whipping cream'. Holds a peak for a few hours if kept cold.
- 35–38% fat — the professional zone. Whips fast, holds sharp piped shapes, resists weeping for a full working day. Most European premium creams (Elle & Vire, Président) live here.
- 38%+ — 'heavy' or 'double' cream. Holds shape almost indefinitely, but overwhips easily into butter if you're not careful.
What is 'overrun' and why should you care?
- 80–100% overrun — dense, rich, holds shape indefinitely. Common in French patisserie.
- 100–150% overrun — the sweet spot for most Indian bakery use. Good yield, good stability.
- 150–200% overrun — the aerated 'topping' zone. Great yield, poor stability without stabilisers.
- 200%+ — non-dairy toppings and industrial aerated products. Cheap per litre, tastes hollow.
Why real-dairy whipping cream is hard in India
- Imported dairy cream (Elle & Vire, Président at 35% fat) — behaves beautifully, but arrives after weeks at sea, is priced at import parity plus duty, and rarely feels 'fresh' by the time it hits your walk-in.
- Non-dairy topping (Rich's, Tropolite) — cheap, high-overrun, stable, but hydrogenated vegetable fat with almost no dairy flavour. Every discerning customer knows the difference.
How to test a whipping cream in your own kitchen
- Measure a fixed volume — say 200 ml — into a chilled bowl. Note the temperature (must be below 8 °C).
- Whip on medium-high to stiff peaks. Time it. Note when it holds a peak that does not fold back into itself.
- Measure the volume of whipped foam in the bowl. Calculate overrun using the formula above.
- Pipe one rosette onto a plate. Photograph it. Leave the plate at ambient (~28-30 °C).
- Photograph again at 1 hr, 2 hr, 4 hr. A good cream holds sharp; a poor cream droops within the first hour.
- Look for weeping — clear liquid pooling under the rosette. This is your killer defect.
