What is weeping, really?

Weeping — the technical name is syneresis — is what happens when the protein network inside cream cheese loses its ability to hold onto the water and fat suspended within it. What you see is a puddle of watery liquid pooling on a cheesecake, dripping from a frosting, or sitting on top of a tub after a few days in the fridge. What is actually happening is a slow structural collapse at the microscopic level. Cream cheese is an emulsion held together by milk proteins (mostly casein) coagulated in a mildly acidic environment. Those proteins form a delicate three-dimensional mesh that suspends fat globules and traps water inside pockets. When the mesh is strong and stable, everything holds. 1. Low fat content. Fat is part of what physically holds the structure together. A cream cheese with 32% fat has less structural buffer than one at 35–36%. How to stop it — the working baker's checklist

  • Buy cream cheese with at least 33–36% fat. Read the pack. If it doesn't say the fat percentage, be suspicious.
  • Bring to room temperature before mixing. 20–30 minutes on the counter, not longer in warm kitchens.
  • Beat on low, only until smooth. If you can still see lumps after 90 seconds, your cheese was too cold — warm it, don't beat harder.
  • Add sugar early, acidic ingredients late. Sugar bonds with water and stabilises the structure. Acid destabilises it if added first.
  • Do not overbake. The centre should still jiggle when you pull it — carry-over heat finishes the set.
  • Cool in the oven with the door cracked open. Rapid cooling causes the top to shrink faster than the interior, creating cracks and pushing water out.
  • Never freeze. Refrigerate up to the shelf-life date, that's it.
